We had a going away party for one of our paralegals who is having a baby boy any day now and I was quite proud of these adorable desserts I made. Food coloring is so much fun! You could make pink ones for Valentine’s Day, Green ones for St. Patrick’s Day (one of my favorite holidays), Red and Blue ones for the 4th of July etc. Color blocking isn’t just for the fashion world.  These little guys were quite a hit, even after I warned everyone that there were four whole sticks of butter in the recipe. An apple a day may keep the Doctor away but a pat of butter keeps the blues away. 

Yields 24 Cookie Cups (2 dozen)

Ingredients:

For the Cookies:

  • 2 sticks butter, at room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 TB vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 cups semi-sweet chocolate chips
  • Sprinkles for decorating (optional)
For the Frosting:
  • 2 sticks butter, at room temperature
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 TB milk or heavy cream
  • 1 – 3 drops blue food coloring

Directions:

1. Preheat oven to 350 degrees F. Generously spray two regular sized muffin tins with cooking spray.

2. Cream the butter and sugars together in a stand up mixer until well combined. Add the eggs and vanilla and mix until well combined.

3. Place the flour, oats, baking soda and salt into a large bowl and stir to combine. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.

4. Scoop about 2 tablespoons of the cookie dough into the muffin tins and gently press down before baking. Bake for 15 minutes, until edges start to turn golden brown.

5. As soon as the cookies come out of the oven, use a spoon or a shot glass :)  to press down the center and make a small well for the frosting.  Run a sharp knife around the edge of the cups so they’ll pop out easily once they cool.  Allow cookies to cool completely before frosting.

6. While cookies are cooling, prepare the frosting: Place the softened butter in a stand up mixer and beat until smooth. Slowly add powdered sugar and continue to mix until thick and creamy. Add the vanilla and milk and mix until smooth and creamy. Mix in a drop of blue food coloring, and add more until you reach the desired color.

7. Scoop the frosting into a piping bag and fill the middle of the cookies.  Top with sprinkles if desired
