Quick + Easy + Delicious = I Love. I love this salad. Can I call it a salad if there is no lettuce in it? Yes, I think so. I’m a grown woman, I can do whatever I want. Noodles > Lettuce. I’m really into using symbols in my typing today. I’m a little wacky because it’s only Tuesday. I don’t like weekdays. But I do like chicken and noodles and thai spices and crushed peanuts. It’s no secret that I think carbs are one of life’s greatest pleasures. But, considering my bikini order shipped yesterday, I figure it’s time to limit the carb intake for just a bit. Meet the potato’s undercover brother – cauliflower. I was a little bit afraid of mashed cauliflower, but with a dab of cream cheese and a few spoonfuls of parmesan, it is surprisingly delicious. In fact, I think I ate too much as I am feeling a bit nauseous right now. Oh wait, I’m watching “Shahs of Sunset” as I write this, so more likely than not that is the true cause of the nausea. It’s so bad that it’s good!
Remember months ago when I started talking about eating healthy so I didn’t have to wear a muumuu during my trip to Hawaii in April? Well, that all kinda went out the window. I just can’t say no to a french fry – or cheese – oh cheese, how I love thee. But now that my Hawaii trip is just around the corner, it’s time to get serious. No more talkin the talk, it’s time to walk the walk! I found this great book called “The Gorgeously Green Diet” It claims to make me not only thin but also beautiful as a result of all the antioxidants. Worth a shot right? So apparently this chili will make you skinny and beautiful. What more could you want from a chili? I haven’t noticed any long term results yet, but I can tell you that it is very tasty and satisfying and easy to make too. Go for it! Continue reading
I think my blood pressure has doubled this week. So many things to do and not enough time! Today was supposed to be my easy day, but so far it hasn’t exactly worked out that way. I woke up bright and early to pop these delicious cookies in our new oven. Yes, new oven! So exciting! Except, it appears I am not smart enough to use this new oven. I couldn’t figure out how to turn the damn thing off. So, at 7am, I had my first nervous breakdown of the day. My better half was at work so he was no help. I consulted the owner’s manual (first time I’ve ever read one of those things), but sadly it was no help (now I remember why I never read those things). So, I resorted to tauntrum throwing and guess what – it magically turned off! Moral of the story – when all else fails, throw a good old fashioned tantrum. Thank God Saint Patrick’s Day is coming up this weekend. I hear green beer and potato skins are both excellent at lowering blood pressure. Continue reading
Let’s be honest, unless it’s passed 9:30am on a Saturday or Sunday, waking up in the morning sucks. I typically hit snooze for about thirty minutes because I dread it so much. However, today I remembered I had these muffins waiting for me, and I only hit snooze for about ten minutes. The task of getting out of bed during the work week is much less daunting when you know you have a delicious baked good waiting for you – especially one that goes so well with a giant cup of coffee. My Fiance gave me a strange look when I told him I was making orange and chocolate chip muffins. Apparently he doesn’t believe in such a combination – until now. He ate two muffins while I typed this. Remember those chocolate orange thingys that you would crack on the sidewalk and eat them in segments? Those things were super yummy right? Well, so are these muffins, and they have oats in them so they’re pretty much a superfood. Continue reading
Didn’t I just say I am not a big chicken person? And here I am posting two chicken recipes in a row. What a hypocrite. I apologize. But I guess I could call this a bacon recipe right? I do like bacon much more than chicken. But if I call it a bacon recipe, it will be much harder to convince you it’s a healthy recipe. Dilemmas, Dilemmas. How about I just call it a tasty recipe? Because it really is. And a quick and easy recipe too. And healthy – really – don’t let the bacon lead you astray. Yes, you can be healthy and eat bacon. I don’t lie.
