Do you know what the difference is between a sweet potato and a yam? I thought I did, as I trusted the experts at my local grocery store not to lead me astray, but now, thanks to Wikipedia, I know I was wrong.  I thought the orange things were yams, and the off white/light gold things were sweet potatoes.  I also thought all the restaurants that served orange-colored “sweet potato fries” were in the business of selling lies, but turns out they are likely in the right! According to the all-knowing, all-powerful Wikipedia, orange sweet potatoes are often mislabeled as yams. True yams are generally round, scaly and starchy – not sweet.  So…I could’ve had orange-colored breakfast biscuits after all! Do you think something is wrong with me considering how much time I spend pondering and researching the difference between a sweet potato and a yam? Maybe I should be reading up on the issues for the upcoming election instead. On second thought, no, potatoes are much more fun.

Ingredients:

  • 3.5 ounces cooked and well-mashed sweet potato (one small potato, or 1/2 of a large potato)
  • 1 1/2 cups all-purpose flour
  • 1/2 TB granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 TB unsalted butter, cold and cut into small pieces
  • 1/2 cup milk (whole or 2% works best)
  • Bacon, sliced cheese, poached or fried egg, or whatever fixins your heart desires

Directions:

1. Preheat the oven to 425 degrees

2. In a large bowl, combine the flour, sugar, salt, baking powder and soda, and whisk until combined.

3. Use a pastry cutter (or your hands) to add the butter pieces to the flour and mix until it turns into coarse crumbles.  Add the milk and mashed sweet potato to this mixture and stir with a spoon until thoroughly combined, but be careful not to over mix.  

4. Drop about 1/4 cup of dough onto baking sheets. Or, if you prefer more even shaped biscuits, use a biscuit cutter.  Bake for 10-12 minutes, or until biscuits are slightly golden and puffy.

5. While the biscuits are baking, fry up some bacon, slice up some cheese, and attempt to poach an egg (If you are as bad at this as I am you can always fry an egg instead).

6. Once biscuits are done, slice in half and prepare your delicious breakfast sammy!
