Sometimes I wonder how I lived my life before Pinterest. How did I plan my wardrobe, pick out paint colors, organize the bathroom, find cute pictures of puppies or discover inspirational witty quotes before the wonder that is Pinterest? And most importantly, how did I keep track of all the amazing recipes I wanted to try that I found on the internet? Life must have been quite chaotic back in 2011 and I guess my brain blocked out the stressful memories. I made these bite size treats for my book club Christmas party and got rave reviews. Whenever anyone complimented me on them I said “pinterest!” Merry Christmas Pinterest. It’s mid September and I really want to start getting excited for Fall, but the weather seems to have different plans. It was 102 degrees yesterday. 102 degrees!!! Pretty sure it was the hottest day of the year. Please remember to recycle people, looks like this global warming thing is no joke. There was no way I was going to turn my oven on in our non-air conditioned home. Instead, I snuck a tumbler of margaritas into the nice cool movie theatre. But, the day before, when it was only a brisk 95 degrees, I made these delicious crostinis. Fall teaser crostinis. I don’t really know what to call these things. They’re kinda like mini frittatas, or mini quiches without the crust, or egg muffins, or souffles. Whatever they are, they’re darn right delicious. Giada never disappoints. Did you see the episode when she got to cook for Will & Kate?? How awesome is that! One of my friends thought she was trying to hit on Prince William by “accidentally” leaning over to show him her assets while serving. I don’t know about that, I mean who wouldn’t want to impress the Prince but her husband designs clothes for Anthropologie! I think I would take a free anthropologie wardrobe over royalty. I’ve been gone a long time. Sorry. But I had very important things to do like watch fireworks, take a trip to Washington D.C., eat and drink myself silly, and then go on a week-long vegan, alcohol-free diet to try to repair the damage. But before this silly cleansing diet, I made this delicious, cheesy, fatty, amazing corn dip. It was so good I even ate the leftovers for breakfast – with tortilla chips. If chillaquiles are an acceptable breakfast food, why not this? I highly recommend you make this for the next summer BBQ or pot luck you attend. I guarantee you will be the most popular person at the party. They also go great with these baked chicken flautas for a fun mexican fiesta.
Happy First Day of Summer!! I should probably post a bikini-friendly recipe today but too bad. This recipe is quite the crowd pleaser though so while it may not help you look your best in a bathing suit, it’s certain to make you lots of new friends. Plus they are baked so how bad can they be?? I know I’ve mentioned my weird personality flaw thing about how I’m not as big a fan of summer as I should be. I imagine it has something to do with this little pest called work. I’m pretty sure summer was my best friend when I was a school kid. It’s really not as fun when you can’t sleep in until noon, eat popsicles and watch music videos on MTV all day (I think I just aged myself by admitting there were still music videos on MTV when I was a kid…) Anyway, I have a new garden this year and super cute patio furniture scheduled to be delivered today, so I’m hoping this will be the year summer and I strengthen our bond. It’s cocktail party season, and every good cocktail deserves a good meatball don’t you think? (I will refrain from making a dirty joke here) These little guys are the perfect party snack, and super easy to make and transport as they are good hot out of the oven but also good at room temperature. This recipe is also kid friendly, just don’t ask the little ones to spell prosciutto (don’t ask me how to spell it either, I had to get a little help from Google). Did you eat enough turkey last week or are you ready for more? I know I risk being outcast for saying this, but I think the turkey is the least exciting part of Thanksgiving. Its all about the sweet potatoes, the stuffing, pumpkin cheesecake, wine! So I am not “turkeyed out” I’m ready for more! These meatballs are quite healthy yet super tasty. If you want to serve them as a party appetizer just make them a little smaller. I’m leaving on a jet plane for Cabo San Lucas tomorrow and am planning on doing nothing but eating Mexican food smothered in cheese and drinking margaritas. Since you can’t come with me here’s a recipe to help you get your Fiesta on from your own kitchen. By the way, I wasn’t kidding about that whole not eating healthy until November 1st thing.
